Tuesday’s Oven Tacos

These oven tacos are perfect for you then. Best part about them, they make a lot and are super easy!

Once upon a time, I was lucky enough to actually have a guy interested in me. We had gone out a few times so I decided it was time for us to stay in and I was going to do the cooking. He loved the idea and so I whipped up something quick so I could quickly get ready and not look like such a slob before he came over. I’ve cooked chicken and veggies in the oven many times before so I figured this was the best option. PLUS! it gave me left overs for days which I truly enjoyed on my lunch breaks and even threw some into an omelette for the morning.

A week prior, I had made some salsa at home and knew it was going to go bad soon. This triggered the idea to throw it on the chicken. When the chicken came out of the oven, it was tender and the opposite of dry (some people get so weird about the word moist)! Even the veggies in the cookie sheet absorbed the delicious flavor.

The chicken and veggies were coming out of the oven as there was a knock on my door. The various toppings were placed in a beautiful order and the table was set. My clothes were a tad on the ‘too casual’ side but I was comfortable and in my favor, he didn’t care.

This delicious quick dish doesn’t have to just be used for occasional lucky dates. Grab your family or a bunch of friends and dine in on these tacos!

  1. Cut chicken, onion and bell peppers into strips or bite size pieces
  2. Place chicken, onion and bell peppers on cookie sheet
  3. Drizzle Avocado oil over foods on cookie sheet
  4. Cover chicken with salsa
  5. Season the veggies as desired
  6. Put cookie sheet in oven at 350 degrees for 40 minutes. Flip chicken and cook for an additional 10 minutes if needed.
Extras
  1. While food is in the oven cooking begin to prepare the extras. Cut up the lettuce and limes
  2. Cook black beans and let cool
  3. Drain canned corn and heat until warm
  4. Place cheese, corn, beans, limes and lettuce in side bowls.
Final Touches
  1. Grab tortillas, spoon up some chicken, and throw in all extras.

If you want to be gluten free, try coconut flour tortillas

Any digestive disturbances, avoid corn and black beans

Ground beef or turkey work great for this too. Just brown it in a skillet with the salsa in stead of the oven.

Make vegetarian by leaving out the meat.
