  1. Cut chicken, onion and bell peppers into strips or bite size pieces
  2. Place chicken, onion and bell peppers on cookie sheet
  3. Drizzle Avocado oil over foods on cookie sheet
  4. Cover chicken with salsa
  5. Season the veggies as desired
  6. Put cookie sheet in oven at 350 degrees for 40 minutes. Flip chicken and cook for an additional 10 minutes if needed.
Extras
  1. While food is in the oven cooking begin to prepare the extras. Cut up the lettuce and limes
  2. Cook black beans and let cool
  3. Drain canned corn and heat until warm
  4. Place cheese, corn, beans, limes and lettuce in side bowls.
Final Touches
  1. Grab tortillas, spoon up some chicken, and throw in all extras.

If you want to be gluten free, try coconut flour tortillas

Any digestive disturbances, avoid corn and black beans

Ground beef or turkey work great for this too. Just brown it in a skillet with the salsa in stead of the oven.

Make vegetarian by leaving out the meat.
